Prepare crispy fried chicken with these steps -
- 1/2 cup Italian chickpea crumbs
- 1 pound bone-in chicken thighs
- 2 tablespoons olive oil
- 1 egg lightly beaten
- 1/2 teaspoon
- 2 tablespoon grated Parmesan cheese
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped parsley
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt plus more to taste
Heat the oven to 400 degrees F and grease a baking sheet with a little olive oil.
Combine the chickpea crumbs, chopped parsley, black pepper, cayenne pepper, garlic pepper, garlic powder, Parmesan and salt. Mix well.
Dip each piece of chicken in the egg, coating both sides lightly, then dip chicken in seasoned chickpea crumb mixture, pressing down to make it adhere, and then place on baking sheet.
Roast in oven until chicken is cooked through, 25-35 minutes.
