This is 85% Cacao but it is surprisingly mild - much smoother and lighter than you might expect. We use very light cocoa beans and instead of adding emulsifiers like soy lecithin we use the extra cocoa butter which adds to the richness and smooth texture. The cocoa beans come from 4 different regions within Peru in the foothills of the Andes leading down to the Amazon Basin. The beans there are characteristically light and mild - known as "fine aroma" beans.
All the cocoa beans are direct sourced from the farmers - no middle-men, and all are UTZ certified - which means we pay them a premium and they commit to implementing specific social, ecological and farming practices.
The chocolate is made at source in Peru as well and typically the beans are 30-60 days old when made into chocolate. This is in complete contrast to most industrial chocolate whose beans are shipped out of the growing country and may be made into chocolate many months, or even years, later. Our process retains a younger more dynamic flavor profile to the chocolate.
