Creamy Elote Dip

This creamy Mexican street corn dip is the ultimate crowd-pleaser, combining sweet corn, zesty citrus, and rich, cheesy flavour in every bite. Quick to make and perfect for sharing, it’s best served with crunchy tortilla chips for an easy, flavour-packed snack.

Servings: 4-6 people

Prep time: 15 minutes

 

Ingredients: 

  •  2 cans of whole kernel corn (or 4 cups of cooked sweet corn) - 341 ml sized cans
  • Juice from 1/2 a lemon (or lime)
  • 2 tbsp fresh cilantro (or parsley), chopped 
  • 3 tbsp mayonnaise 
  • 1 tbsp sour cream
  • 1/3 cup cotija cheese (or feta), crumbled 
  • Salt and pepper, to taste
  • 1 tsp paprika 
  • 1/2 tsp chili powder
  • Masa Traditional Corn Tortilla Chips, to dip 

 

Directions: 

  1. To a bowl, combine all ingredients and toss together until well combined. 
  2. Garnish with extra cotija cheese and paprika, and enjoy with Masa Traditional Corn Tortilla Chips.
