
High-Protein Mother's Day Strawberry Chocolate Chip Pancake Casserole
Treat Mom to a cozy, crowd-pleasing brunch with this strawberry chocolate chip pancake casserole. Baked to perfection with fluffy pancakes, melty chocolate, and fresh strawberries, it’s an easy make-ahead dish that feels special without the extra effort.

Ingredients:
For the Pancakes
- 2 cups Kodiak Buttermilk pancake mix
- 1 ½ cups water
- ⅔ cup diced strawberries
- ½ cup chocolate chips (or more if desired)
For the casserole mixture
- 2 eggs
- 1/2 cup milk of choice
- 1 tsp cinnamon
- 1 tsp vanilla extract
Directions:
- To a bowl, add Kodiak Buttermilk pancake mix and water. Whisk until you get a smooth batter.
- Heat a pan on medium heat with oil or butter, then add a spoonful of batter to the pan. Add chocolate chips or diced strawberries, then add a teaspoon of extra batter on top so it doesn’t burn the chocolate/strawberries when you flip it. Cook for about 5 minutes or until the edges begin to brown and small bubbles form. Flip and cook on the other side for 5 minutes. Repeat for the remaining batter.
- Let pancakes cool once cooked and set aside.
- Preheat the oven to 350F.
- To another bowl, whisk together eggs, milk, cinnamon and vanilla extract.
- Cut all your pancakes in half, then layer in a baking dish.
- Pour the casserole mixture on top of the assembled pancakes.
- Bake in the oven for about 45 minutes or until the casserole mixture has completely cooked.
- Remove from the oven, let cool and cut into slices.
