Easy No-Bake Cookie Bats

These no-bake Cookie Bats are the ultimate Halloween treat! Made with peanut butter cups, gluten-free sandwich cookies, and a touch of chocolate, they’re spooky, fun, and easy enough for kids to help make.

Servings: 8 cookie bats

Ingredients: 
8 small peanut butter cups
Melted chocolate
8 Simple Mills Gluten-Free Nut Butter Sandwich Cookies Cocoa & Cashew Butter
16 googly eyes

Directions: 
1. Unwrap 8 mini peanut butter cups and set aside. 
2. Take one Simple Mills Sandwich cookie and carefully separate the two cookies. Try and ensure most of the cashew butter filling remains on one side of the cookie. 
3. Carefully take one cookie half and split it down the middle, as evenly as possible. 
4. Place a bit of melted chocolate on top of your peanut butter cup, and stick the sandwich cookie halves on top, with the straight side of the cookie at the bottom. 
5. Place a bit of melted chocolate on the bottom of your googly eyes, and stick them on the center of the peanut butter cups.
