Vegan Chickpea Tuna Sandwich

This vegan chickpea “tuna” sandwich is a fresh, protein-packed lunch made with simple ingredients and bold flavour, perfect for an easy plant-based meal.

Servings: 4 sandwiches 
Prep time: 20 minutes

Ingredients: 
1 can of chickpeas, rinsed and drained (541 ml can) 
2 ribs of celery, diced
1/2 medium-sized red onion, diced
1-2 stems of fresh parsley, finely chopped
1 tbsp capers
3 Hot Girl Pickles, Honey Harissa flavour, diced
3 tbsp vegan mayonnaise (or plain Greek yogurt)
1 tbsp dijon mustard
Salt and pepper, to taste
2 slices of bread 
1 leaf of Boston lettuce
1 Hot Girl Pickles, Honey Harissa flavour, to garnish the sandwich 

Directions: 
1. To a large bowl, add chickpeas and mash with a fork, leaving a few whole chickpeas for added texture. 
2. Add diced celery, red onion, parsley, capers, Hot Girl Pickles, mayonnaise, dijon mustard, and salt and pepper. Mix until everything is well combined. 
3. Take 2 slices of bread and place one leaf of Boston lettuce on one side. 
4. Add 2-3 heaping tablespoons of the chickpea mixture onto the lettuce, then top with the second piece of bread. 
5. Cut in half and enjoy!
