Vegan Caprese Salad with a Twist

Vegan, Dairy-Free

Serves 4

 

Ingredients:

3 Large tomatoes, cut into 1/2 inch slices

1 Cup vegan feta, crumbled

1-6oz Container raspberries 

Primal Kitchen Organic Extra Virgin Olive Oil

Balsamic Glaze

Fresh basil

Salt & Pepper

 

Directions:

1. Wash and slice tomatoes. Arrange onto a plate. Season with salt and pepper.

2. Place 1 tablespoon of feta onto each tomato slice. Top each tomato slice with a raspberry.

3. Drizzle olive oil and balsamic cream over salad. Garnish with fresh basil.
