Easy Tijuana Caesar Salad
Ingredients:
- 2 heads of romaine lettuce
- 1 cup croutons
- 1 tbsp. anchovy paste
- 2 garlic cloves
- 1 tbsp. dijon mustard
- 2 tbsp. Worcestershire sauce
- 1 tbsp. fresh lime juice
- 1 egg yolk
- 3/4 cup extra virgin olive oil
- 3 tbsp. grated parmesan cheese
Directions:
- Add garlic cloves, lime juice, anchovy paste, dijon mustard, Worcestershire sauce, and the egg yolk to a food processor. Pulse until garlic is fully combined and the mixture is smooth.
- Slowly drizzle in the extra virgin olive oil with the processor on low. The oil should be fully incorporated into the mixture.
- Stir parmesan into the mixture. This is your smooth and delicious Tijuana Caesar dressing!
- Drizzle the dressing over lettuce leaves and garnish with croutons.
