Mozzarella & Tomato Summer Salad
Serves: 2-4
Ingredients:
- 3-4 large heirloom tomatoes
- Buffalo mozzarella
- 1-2 cooked sugar beets
- Small handful of basil
- Prosciutto
- Small handful of berries (of your choice)
- Graza Extra Virgin Olive Oil Drizzle Finishing Oil
- Sprinkle of flakey sea salt
Directions:
- Slice heirloom tomatoes and sugar beets, and neatly arrange them on a plate–alternating between the two.
- Using your hands, gently pull the buffalo mozzarella into pieces and scatter over the salad.
- Add prosciutto, basil and berries over top, and finish with a drizzle of Graza Extra Virgin Olive Oil Finishing Oil and a sprinkle of flakey sea salt

- This recipe is super simple but relies on a good, fresh mozzarella, and exquisite, high-quality extra virgin olive oil.
- Use your favourite seasonal fruits, we used beets! But peaches and plums also pair perfectly well.
