Happy 6th Birthday, Natura Market! We're celebrating with a beautiful Matcha Crepe Cake, layers of soft green tea crepes with luscious whipped cream and fresh berries. It's almost as good as it looks! Are you ready for a slice?
What's a better way to celebrate Natura Market’s 6th Birthday than with a Matcha Crepe Cake?! Soft green tea crepes layered with whipped cream, and topped with fresh berries – easy to make, yet so deliciously decadent!
Serves 8
Ingredients:
For the crepes:
6 large eggs
2 ⅔ cups milk
¼ cup sugar
4 tablespoons melted butter
½ teaspoon salt
1 ½ teaspoons vanilla extract
2 cups flour
¼ cup Navitas Organics Organic Matcha Powder
Butter, for cooking
Fresh berries & Mint, for decorating
Whipped cream:
1-7g package gelatin
¼ cup cold water
¼ cup boiling water
2 cups whipping cream
⅓ cup powdered sugar
1 teaspoon vanilla extract
Directions:
Place all the ingredients (minus the butter, berries, and mint) for the crepe batter in a blender. Blend until completely smooth.
Melt a small amount of butter in a pan over medium-low heat. Scoop a ¼ side portion of crepe batter, and pour into the pan. Swirl the pan to evenly disperse the batter, creating a thin layer on the bottom of the pan. Cook for 30 seconds, and use a spatula to flip, cooking for a couple of seconds more. Continue until batter is used up, and set the crepes aside to cool completely - at least 1 hour.
To make the whipped cream, first, stir the gelatin into cold water in a small bowl. Add the hot water and stir until completely dissolved, set aside. Adding the gelatin is optional, but really helps to set the cake.
Place the whipping cream, powdered sugar, and vanilla extract in a large mixing bowl. Use an electric mixer to whip the cream until stiff peaks form. Slowly pour in the gelatin, incorporating it into the mixture. Set in the fridge until ready to assemble.
To assemble, Place the first crepe on a serving dish, and spread a thin layer of whipped cream on top. Place another crepe on top of the whipped cream layer and repeat right until the final layer. Garnish the top with any remaining whipped cream, a sprinkle of matcha powder, berries, and mint.
