Makes 4 Tarts
Ingredients:
2 large fresh peaches, pit removed and thinly sliced
2 tablespoons brown sugar
1 teaspoon lemon juice
¼ teaspoon vanilla extract
1-225g sheet frozen ready-rolled puff pastry, thawed (see note)
8 Traverse City Whiskey Co. Cocktail Cherries, quartered
2 teaspoons melted plant-based butter alternative
Plant-based vanilla ice cream, for serving (optional)
Directions:
Preheat the oven to 375℉.
In a mixing bowl, combine the sliced peaches, brown sugar, lemon juice, and vanilla extract. Toss together and set aside.
Cut the pastry sheet into four large equal-sized squares, then fold each square in half diagonally to form a triangle shape. Along the widest edge of the triangle, make two diagonal cuts (about ¼ inch in depth from the outside edge) along the inside of the pastry - leaving the dough connected at the top.
Unfold the dough, and cover the center with the sliced peaches, and chopped cocktail cherries. Fold the cut pieces of dough over the filling, overlapping the dough on the opposite side. Use a fork to press down on the edges so the dough sticks together.
Lightly brush the pastry dough with melted plant-based butter alternative and bake for 25-30 minutes. Until the pastry is golden and crisp. Serve warm with vanilla ice cream.
Note: Check your health food store for vegan-friendly options for ready-made frozen puff pastry!
