Ingredients
1/2 Green leaf lettuce
3-5 Radishes, cut thin
1 Grapefruit, peeled
Fresh raspberries and blueberries
Cucumber ribbons
2 tsp Chosen Foods Avocado Oil Ranch Dressing
Roasted chickpeas:
1 cup drained chickpeas
2 tsp olive/avocado oil
2 tsp Primal Palate Ranch Seasoning
Instructions
1. Prepare all ingredients. Wash and cut vegetables and berries. Peel grapefruit and separate the wedges. Slice cucumber into thin ribbons. Arrange on a serving plate.
2. Roast chickpeas: coat the chickpeas in ranch seasoning, pour onto a cookie sheet and bake in a 400 degree oven for 20-25 minutes. Remove from oven and cool.
