This isn't your normal apple crumble - it's vegan! The perfect comfort dessert to warm you up at the end of a chilly day. The crumble topping is light, crumbly, and just plain delicious. And the apples? Spiced with cinnamon for an irresistibly sweet and delicious dessert!

Ingredients:
For serving:
1-400 ml can Cha’s Organic Coconut whipping cream
2 tablespoons maple syrup
½ teaspoon vanilla extract
For the Filling:
2 small gala apples, peeled and diced
2 small granny smith apples, peeled and diced
1 tablespoon lemon juice
½ teaspoon vanilla extract
2 tablespoons coconut sugar
½ teaspoon ground cinnamon
1 teaspoon cornstarch
For the crumble:
½ cup gluten-free quick oats
½ cup gluten-free all-purpose flour
¼ cup coconut sugar
½ teaspoon ground cinnamon
Pinch salt
¼ cup cold vegan butter, cut into cubes
Directions:
Place the Cha’s Coconut Whipping Cream in the refrigerator for at least 6 hours to cool completely. Once cooled, scoop it into a cold stainless steel mixing bowl and add the maple syrup and vanilla. Using an electric mixer, whisk the coconut whipping cream on high until stiff peaks form, about 5-6 minutes. Transfer to an airtight container, and refrigerate until ready to use.
Preheat the oven to 350℉. Lightly grease a medium baking dish with vegan butter. In a large bowl, combine the apples, lemon juice, vanilla, sugar, cinnamon and cornstarch. Mix well, and transfer to the prepared baking dish, spreading the mixture evenly onto the bottom.
In the same bowl, combine the flour, sugar, oats, cinnamon, and salt. Mix well. Add the vegan butter. Cut the butter into the flour mixture using your fingers, making sure there are no large clumps left. evenly distribute the mixture over the apples.
Bake uncovered for 25-30 minutes, until bubbly and the top is golden brown. Serve warm with coconut whipped cream and an extra dash of cinnamon.
