Brown Rice Paper Vegetable Summer Rolls With Easy Dipping Sauce

Plant-Based, Dairy-Free, Gluten-Free, Vegetarian

Ingredients:

Peanut sauce
¼  cup creamy peanut butter
1 tablespoons rice vinegar
1 tablespoons gluten-free soy sauce
1 tablespoons honey
A pinch of garlic
A pinch of onion
 
Spring rolls
King Soba Organic Brown Rice Paper
romaine lettuce
Purple cabbage
Carrot
Small cucumber
Sweet peppers
Green onions


Instructions

1. Make the peanut sauce by adding the ingredients to a small bowl and mix until smooth. Add a little water if necessary to make the right consistency for a dip.
2. Wet a single sheet of rice paper and lay onto a dish towel or cutting board.
3. Lay your vegetables about an inch from the bottom and the sides to leave room to roll.
4. After adding all of your vegetables, pull the bottom over the top fold in the sides and roll it up 
5. Continue with the remaining ingredients and serve with the peanut sauce.

Other variations to try: cilantro, avocado, mango 

Make it nut free: use tahini instead of peanut butter
