Chocolate Frosting

  1. Preheat the oven to 350°F. Grease and flour two 6-inch cake pans.
  2. In a large bowl, whisk together sugar, cocoa powder, flour, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk the cacao butter, puree, and milk until smooth.
  4. Pour the wet ingredients into the dry, whisking until no lumps remain. Pour in the brewed coffee, mixing until just combined.
  5. Pour batter into prepared pans and bake for 30-45 minutes, or until a knife inserted in the centre of the cake comes out clean. Cool completely on a wire rack before frosting.
  6. To make the frosting, heat together the cream and chocolate until smooth. Then freeze for 20 mins and transfer to an electric mixer, and cream on low speed, gradually increasing to high speed for 1 minute, until mixture has doubled in size and is fluffy.
  7. Frost cake by spreading 2/3 tbsp of frosting evenly on the first cake layer, then repeat with the second layer. Use remaining frosting to frost sides of the cake. Last, use the back of a spoon to create a swirling pattern all around the cake!
  8. Slice and enjoy!
