Easy Gluten-Free Gingerbread Loaf

'Tis the season for an easy-peasy, ginger-squeezy Gluten-Free Gingerbread Loaf! With ginger, cinnamon, and a touch of maple syrup, it's perfectly spiced, irresistibly moist, and ready to make your holidays extra merry. Santa might just ditch the cookies this year for a slice of this irresistible loaf! 

 

 

Recipe:

Makes 1 loaf

 

Ingredients:

1/4 cup olive oil

1/4 cup maple syrup

2 egg

1/2 cup Elmhurst Plant-Based Cashew Creamer Cinnamon Churro

2 cups almond flour

2 tsp ground ginger 

1 tsp vanilla extract

1 tsp cinnamon

1 tsp baking powder

2 tbsp melted coconut butter

 

Directions:

  1. Add wet ingredients except for the coconut butter to a medium mixing bowl. Mix until combined.
  2. Add in the dry ingredients and mix again. 
  3. Pour batter into a parchment-lined loaf pan. Bake at 350°F for 45-55 minutes or until a toothpick comes out clean.
  4. Drizzle the cooled loaf with melted coconut butter. Sprinkle extra cinnamon on top and enjoy!
