Easy Gluten-Free Gingerbread Loaf

Recipe:
Makes 1 loaf
Ingredients:
1/4 cup olive oil
1/4 cup maple syrup
2 egg
1/2 cup Elmhurst Plant-Based Cashew Creamer Cinnamon Churro
2 cups almond flour
2 tsp ground ginger
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
2 tbsp melted coconut butter
Directions:
- Add wet ingredients except for the coconut butter to a medium mixing bowl. Mix until combined.
- Add in the dry ingredients and mix again.
- Pour batter into a parchment-lined loaf pan. Bake at 350°F for 45-55 minutes or until a toothpick comes out clean.
- Drizzle the cooled loaf with melted coconut butter. Sprinkle extra cinnamon on top and enjoy!
