Gluten-Free Carrot Muffins

Carrot muffins are an Easter classic, but these gluten-free carrot muffins are even better! Light and fluffy, these bites of carrot heaven are a tasty treat that every-bunny will enjoy, making them the perfect dessert for your Easter brunch tables!

1 pack of Stellar Eats Carrot Cake + Muffin Mix

2 eggs (or egg substitute)

⅓ cup melted butter or oil

½ cup plant-based milk



  1. Preheat oven to 350°F
  2. Whisk eggs, milk, and butter together in a bowl 
  3. Add Stellar Eats Carrot Cake + Muffin Mix into the bowl and mix until combined and uniform. Let batter sit for 5 minutes to rehydrate the carrots
  4. Pour batter evenly into 12 greased or lined muffin tins and bake for 18-20 minutes
  5. Let cool for 15 minutes before removing from the pan 
  6. Top with your favourite frosting and enjoy!
