Gluten-Free Oatmeal Chocolate Chip Raisin Cookies
An old favourite that just got better. These gluten-free oatmeal cookies combine tender, chewy bites of rolled oats with chunks of rich chocolate chips and tender raisins for a healthy twist on a classic.

Ingredients
- 110 g Cacao butter (melted)
- 110 g Gluten-free flour
- 70 g Chocolate chips
- 1 Egg
- 100 g Light brown sugar
- 50 g Sugar
- 130 g Oats
- 75 g Raisins
- 2 tbsp Plant-based milk
Instructions
- Preheat the oven to 350 degrees. Line your baking tray with parchment paper or silicone baking mats.
- Begin by creaming together the cacao butter, brown sugar, and granulated sugar until combined.
- Mix in one egg, then add the flour and mix just until combined. Then mix in your oats, raisins and chocolate chips.
- Scoop the dough out, and transfer to the prepared baking sheet and spacing each cookie 2-inches apart.
- Bake in a preheated oven, for about 12 - 14 minutes until the cookies edges are golden brown (centre should look slightly under-baked).
- Once baked, allow them to cool for 10mins on the baking tray before enjoying with a glass of milk.
