Gluten-Free Oatmeal Chocolate Chip Raisin Cookies

An old favourite that just got better. These gluten-free oatmeal cookies combine tender, chewy bites of rolled oats with chunks of rich chocolate chips and tender raisins for a healthy twist on a classic.

  1. Preheat the oven to 350 degrees. Line your baking tray with parchment paper or silicone baking mats.
  2. Begin by creaming together the cacao butter, brown sugar, and granulated sugar until combined.
  3. Mix in one egg, then add the flour and mix just until combined. Then mix in your oats, raisins and chocolate chips.
  4. Scoop the dough out, and transfer to the prepared baking sheet and spacing each cookie 2-inches apart.
  5. Bake in a preheated oven, for about 12 - 14 minutes until the cookies edges are golden brown (centre should look slightly under-baked).
  6. Once baked, allow them to cool for 10mins on the baking tray before enjoying with a glass of milk.
