Gluten-Free Plum Pie

If you're craving a dessert that's as delightful as a summer's day and as cozy as a warm hug, you've come to the right place! With plump, juicy plums, nestled in a flaky, buttery crust, this plum pie is seriously plum-believable! It's sweet, it's tart, it's easy as pie (pun intended), and it'll have you hooked from the very first bite.

Gluten-Free

Ingredients:
3 eggs
3 tablespoons of raw coconut sugar (or use monk fruit 1:1 to reduce sugar content)
1 teaspoon of vanilla extract
a pinch of salt
70 g of melted butter
3 tablespoons of sour cream or plain yogurt
250 g of gluten-free flour
baking powder - 1 tbsp.
halved plums - 5-8 pcs (depending on the size)

Instructions:
1. In a bowl, whisk eggs, sugar, vanilla extract, salt, melted butter and sour cream (you can use a mixer).
2. Add 250 g of sifted flour, gently mix with a spoon, and transfer to a baking pan lined with parchment paper.
3. Wash and carefully half the plums removing the pits. Try to use ripe fruit for a sweeter and softer texture. Place the plums on top of the dough with the cut side up. Sprinkle the tops with a little bit of coconut sugar.
4. Place the pan in a preheated oven to 390' F for about 30-35 minutes. Once removed from the oven, sprinkle a little powdered sugar. Enjoy!
