High Protein Spicy Noodle Stir Fry

Made with high-protein egg white noodles, this quick, easy, and healthy stir fry is packed with protein that'll satisfy those takeout cravings without leaving your kitchen!

 

High-Protein, Low Carb, Low Sodium

Ingredients:

½ cup red onion, diced

1 tablespoon olive oil

1 thinly sliced thai red chili pepper

2-3 large carrots, thinly sliced

½ cup mushrooms, diced

½ cup broccoli, cut into small pieces

1 red pepper, thinly sliced

½ cup bean sprouts

1 package Miracle Noodles Egg White Vermicelli Noodles

 

Sauce:

¼ cup low-sodium soy sauce

2 tablespoons hoisin sauce

¼ cup low-sodium vegetable stock

½ teaspoon sesame oil

¼ Tablespoon rice vinegar

1 cloves garlic, minced

Pinch of red pepper flakes

 

Sesame seeds for garnish

½ green onion, diced for garnish

 

 

Directions

  1. Begin by making the sauce: combine all ingredients in a bowl. Set aside.
  2. In a large wok or pan, saute red onion and red chilli pepper with one tablespoon olive oil. 
  3. Once sauteed, begin adding veggies, starting with the carrots. 
  4. Once cooked through, add your noodles and add sauce. Mix until well combined.
  5. Serve with sesame seeds and onion. Enjoy!
