Gluten-Free, Vegetarian, Grain-Free
1⅔ Cups soft feta cheese (Macedonian style feta)
¼ Cup Mike’s Hot Honey
¼ Cup plain greek yogurt
½ Cup roasted pistachios, crushed
2 Tablespoons extra virgin olive oil
½ Teaspoon red pepper flakes, optional
Crackers or baguette, for serving
1. Place the feta in a food processor. Add olive oil and greek yogurt. Process until light and fluffy, scraping down the sides as needed -- about 1 minute. Transfer to a flat serving plate.
2. Drizzle the honey evenly over the feta, and cover with crushed pistachios. Sprinkle with more chili flakes, to taste, and serve with crackers or baguette.
