Vegan Apple Cinnamon Pancakes
These fluffy vegan apple cinnamon pancakes taste like apple pie, but are way healthier! Full of the best fall flavours, they're gluten-free, vegan, super stackable, and oh so filling!

Ingredients
- 100 g Gluten-free baking flour
- 1 tsp Cinnamon
- 50 g Sliced apple
- 1 Banana
- 180 ml Plant-based milk
Cinnamon Apple Topping
Glaze
- 50 g Icing Sugar
- 1 tsp Plant-based milk
Instructions
- Begin by simply mixing together the sweet potato flour and cinnamon in a bowl. Once combined, create a dip/well to pour the wet ingredients into. As this will help prevent any lumps from forming.
- Add the chopped apples and stir until combined
- Prepare your pan by greasing it with oil or tsp of plant-based butter, then pour a ladle full of batter into your pan. Cook for 3-4 mins.
- Your pancakes are ready to flip when the batter on top is no longer runny with only small patches of raw batter. You may also see the sides of the pancake begin to brown.
- Cook for a further 2 minutes on the other side then transfer to a plate and repeat the process until all the batter has been cooked.
- In a bowl microwave the apples, cinnamon, sugar, cornflour and water for 1 minute. In a separate bowl mix together the icing sugar and milk until thick and smooth
- Finally serve with apples and your desired amount of glaze. Enjoy!
