Bacon, Egg & Cheese Breakfast Pizza Bagels

Ingredients:

2-3 slices bacon, diced

¼ cup diced yellow onion

¼  cup diced green pepper

½ cup diced mushrooms

3 eggs, beaten

2 Carbonaut Keto Gluten-Free Herb & Garlic Bagels, cut in half 

4 tablespoons pesto OR marinara

¼ cup shredded cheddar. 

 

Directions:

Preheat the oven to broil setting on high.

Add the diced bacon to a pan over medium heat. Cook, until browned and crispy, and drain any excess fat. Add the onion, green pepper, and mushrooms. Season with salt and pepper, and saute until slightly softened, about 3-4 minutes, stirring often. Remove from the pan. 

Add the eggs to the pan, stir until cooked through and fluffy. Halve the bagels, and lay cut side up on a parchment paper lined baking sheet. Smear pesto on each bagel half, and top with the eggs, the bacon vegetable mixture, and then sprinkle with cheese. Broil for 4-5 minutes - just until the cheese is melted and bubbly. Serve and enjoy!
