Jerk Seasoned Chicken Wings with Mango Slaw

Makes: 2-3 servings

Ingredients

For the Jerk Seasoned Chicken Wings:

2 lbs. split Chicken wings

1 Tablespoon Extra virgin olive oil

1 Tablespoon Lime juice

2 Tablespoons Primal Palate Jerk Seasoning Blend

1/4 Teaspoon Sea salt

1/4 Teaspoon Red pepper flakes (optional)

For the Mango Slaw:

1/4 Cup Mayonnaise

1/2 Tablespoon Coconut sugar

1 Tablespoon Vinegar

1 Tablespoon Lime juice

Pinch of Sea salt

4 Cups shredded Purple cabbage

2 Carrots, grated

2 Scallions, sliced thin

1 Ripe Mango, chopped into cubes

2 Tablespoons Cilantro, chopped (optional)

Instructions

For the Jerk Seasoned Chicken Wings:

1. Blot chicken wings with paper towel to remove excess moisture. Place chicken wings in a large bowl or freezer bag and add olive oil, lime juice, Primal Palate Jerk Seasoning Blend, sea salt, and red pepper flakes. Cover and let marinate for at least 30 minutes or overnight.

2. Preheat oven to 425 Degrees F. Place chicken wings on a foil lined baking sheet and bake for 50 minutes, flipping half way through.

For the Mango Slaw:

1. In a small bowl, combine mayonnaise, coconut sugar, vinegar, Lime juice and sea salt. Whisk together and set aside.

2. In a large bowl, add shredded cabbage, carrot, scallions, mango, and cilantro. Pour dressing over mixture and toss to coat. Cover and refrigerate until ready to serve.
