Protein Burrito Bowl

Say adios to bland meals and hola to this easy and delicious protein burrito bowl! With tangy salsa, creamy avocado, and hearty beans, all on top of a bed of low-carb rice, this protein bowl is like a fiesta in every spoonful!

 

High Protein, Plant-Based, Vegan, Vegetarian, Dairy-Free

Makes 4 servings

 

Ingredients:

2 cans (15oz) black beans, drained and rinsed

1 bag Kaizen High Protein Low Carb Rice

1 head lettuce of your choice, shredded (about 1 – 2 cups)

½ cup cilantro, divided into whole and chopped

1-2 tablespoons lime juice

½ cup corn salsa or pico de gallo 

1 pepper, sauteed or grilled

1 – 2 avocados, quartered

Lime wedges or lime juice, to taste

Salt, to taste


Topping Ideas: vegan sour cream, vegan queso, chili crisp oil, plant-based luncheon meat or plant-based chicken

Directions:

  1. Cook rice following directions on bag and drain. Add lime juice and chopped cilantro then mix. Set aside.
  2. In your bowl, about ½  cup of rice, ¾  cup of beans, ¼ to ⅓ cup of corn salsa or pico de gallo, and ¼ of the cooked peppers. Add a handful of shredded lettuce, whole cilantro and avocado. Top with some more lime juice for added flavour if preferred. Enjoy!

 

Store: All the leftover components can be stored in the refrigerator for up to 3 – 4 days. Store individually or together (as for meal prep).
