Makes 12 Coconut Muffins
Ingredients
1 Egg
1 cup Vanilla almond milk
â…“ cup Honey
¼ cup Coconut oil
1 t Vanilla extract
1 ½ cup Oat flour
1 tb spoon Baking powder
2 scoops Vital Proteins Coconut Collagen Creamer
¼ t Salt
Coconut shreds for toppings
Instructions
1. Preheat the oven to 400°F.
2. Mix all of the wet ingredients for the muffins in a mixing bowl until smooth.
3. Add the dry ingredients for the muffins to the bowl and mix until well combined.
4. Pour the mixture evenly into a greased muffin pan (muffin liners optional).
5. Top each muffin with desired amount of coconut shreds.
6. Bake the muffins for 25 minutes in the oven.
7. Let the muffins cool for 5-10 minutes and enjoy!
