Makes: 16 cake bites
1 Cup Almond flour
⅓ Cup Unsweetened coconut flakes
½ Cup Artisana Coconut Butter, softened
½ Cup Shredded carrot
¼ Cup Low-carb granulated sweetener, ground in a spice grinder (see Note)
1 Teaspoon Ground cinnamon
⅛ Teaspoon Ground ginger
⅛ Teaspoon Ground nutmeg
⅛ Teaspoon Ground cardamon
Pinch of Salt
1. Add all the ingredients to a food processor and process until fully combined, about 30 seconds, scraping down the sides if necessary. Scoop a tablespoon amount of mixture into your hand and roll into a ball. Continue for the rest of the dough. You should get approximately 16 small cake bites.
2. Store in an airtight container in the refrigerator.
3. Note: Grinding the sweetener in a spice grinder into more of a powder texture will ensure there are no large granules throughout the cake bites, creating a smooth texture.
