This hummus style dip is packed with smokey flavour and keto-friendly! Made with Carrington Farms Ground Lupin, roasted red pepper, tahini, and smokey spices -- it is best served with fresh vegetables and crackers, just like hummus!

Ingredients
1 Package Carrington Farms Spanish Style Ground Lupin
2 Roasted red peppers from a jar. rinsed
¼ Cup tahini
2 Cloves minced garlic
2 Tablespoons Olive oil
1 Teaspoon ground cumin
1 Teaspoon smoked paprika
5-6 Slices calabrese chili peppers
Juice of 1 lemon
Parsley, for topping
Directions
1. Bring a pot with 1¾ cup water to a boil. Reduce the heat to low and add the Lupin. Stir well to combine, cover, and cook for 2 minutes. Remove the lid and cook for 1 minute longer. Fluff with a fork and set aside to cool slightly.
2. Add the cooled lupin to a food processor with the remaining ingredients, minus the parsley. Process, scraping down the sides if needed, until very smooth -- about 2 minutes. Transfer to a bowl, and set in the fridge to cool.
3. To serve, drizzle the dip with more tahini, a drizzle of olive oil, chilies, and fresh parsley. Serve with fresh chopped vegetables.
