Makes: 2 tuna melt sandwiches
1-3.3oz package Urbani Foods Vegan Tunah, drain excess oil
2 tablespoons veganaisse
½ teaspoon lemon juice
½ tablespoon grainy dijon mustard
2 tablespoons finely diced celery
1 tablespoon finely diced red onion
1 teaspoon chopped capers
salt and pepper, to taste
2 small handfuls plant based cheese shreds or 1 slice cheddar “cheese”
4 slices plant-based vegan-friendly bread
1. Preheat broiler on high.
2. In a medium bowl, combine the fish-free tuna, veganaisse, lemon juice, mustard, celery, onion, and capers. Season with salt and pepper to taste.
3. Spread the tuna mixture evenly on 2 slices of bread and top with the “cheese” shreds. Place on a parchment paper baking sheet with remaining 2 slices of bread (they will toast in the oven) and broil until the cheese is melted - 3 to 5 minutes. Keep an eye on it so it does not burn.
4. Remove from the oven, and place the toasted bread slices on top. Cut in half, and enjoy.
