Easter is just around the corner and we have a special treat for you — healthy Easter treats that are easy to make! We all know Easter is filled with goodies, so why not make them a little bit healthier!
Ring in the spring season with an Easter celebration, and what better way to celebrate than with Easter sweets? Sweets and the holidays go hand and hand, but for some of us on our healthy journeys, oftentimes, we end up turning away the sweets to stick to our regiments, but we’re here to say everybody deserves sweets! In these times, with the ever increasing demand for healthier alternatives, and with more and more modern diets coming into recognition, it’s easy for most of us to turn away from the foods and sweets we once loved, but as they say, necessity is the mother of invention, and when no one else is going to answer our needs, we start to look within for the answers. So we looked within and came up with these healthy recipes for your Easter baking session!
Easter Sugar Cookies
Probably one of the most basic sweets that anyone can make during the holidays, or just when the craving hits are cookies, and sugar cookies are a staple in Easter. They’re easy to make and fun to decorate with loved ones to get into that Easter spirit and with this elevated recipe, healthier too!
What You’ll Need
2 ½ cups of baking flour (You can sub out for whole wheat flour). You can reduce this for a smaller serving, this will serve about 40 sugar cookies.
1 teaspoon of baking soda
½ teaspoon of baking powder
1 cup of melted butter (You can substitute this out for a nut butter of your choosing, or margarine)
1 ½ cups of sugar (You can substitute this with maple syrup, coconut sugar, or even honey)
1 egg (This can also be substituted with applesauce, flaxseed meal, or chia seeds)
1 teaspoon of vanilla extract
A baking tray lined with parchment
Instructions
Preheat your oven to 375 F degrees, and while it heats, stir the dry ingredients–the baking flour, baking soda, and baking powder–together in one bowl.
In a mixer, beat the sugar (or sugar alternative that you’re using) and butter (or alternative) together until the mix is smooth, and when it’s smoothed, you’ll add in the egg and vanilla extract until it’s all uniform.
Then, grab the dry ingredient mix and add them to the smooth mixture slowly, mixing occasionally so that the dry ingredients are fully integrated into the mix.
Once all ingredients are uniform, prep baking trays lined with baking sheets, and roll small balls of the dough (about the size of a walnut), placing them on the baking tray, with enough space between them so that they don’t end up sticking together when they bake!
Once your oven’s preheated, just pop the trays in and let them bake! Check around 7 minutes or so to see how they’re coming along and as soon as you see the edges of the cookies turn to a beautiful golden brown, you’ll know that they’re ready!
Set aside for them to cool down, and when they’ve cooled, plate them!
Optional: You can also prep some icing sugar with some food coloring to decorate the surface of the sugar cookies to look like cute little easter eggs with your friends and family members for a fun easter activity to do!
Easter Cupcakes
What’s a better way to kick off the Easter baking than with an Easter cake in a cup? Cupcakes are not only a staple sweet for anyone’s sweet tooth but also an easy sweet to make, especially by the dozen! There’s also about a dozen ways to make them and different ingredients that you can use to make yourself a happy and healthy platter of 24 cupcakes!
What You’ll Need
The ingredients are almost the same as the sugar cookies so if you have any leftover ingredients from that recipe, feel free to use them for this one!
2 ½ cups of baking flour, which you can substitute out for whole wheat flour
2 cups of sugar (You can substitute this with maple syrup, coconut sugar, or even honey)
3 teaspoons of baking powder
1 teaspoon of salt
1 cup of milk of your choosing
1 tablespoon of vanilla extract
½ cup of oil
2 eggs
1 cup of water
A cupcake pan or tray to pour the cupcake batter in
Optional: powdered sweetener for frosting and food coloring to decorate the top of your cupcakes.
Instructions
Preheat your oven to 350 F degrees. In two separate bowls, you’ll mix the dry ingredients in one, so the baking flour, sugar, baking powder, salt, and in the other bowl, you’ll mix the wet ingredients together, so the milk, vanilla extract, oil and eggs, don’t add the water to the wet ingredients, keep it aside for now.
After the contents of both bowls are fully combined, you’ll gradually add the dry ingredients into the bowl with the wet ingredients, stirring occasionally so that everything gets fully combined. Stir all ingredients into one uniform mixture, and then, slowly pour the water in and mix, making sure to get every bit in the mixture!
Fill your cupcake tray with the batter half way so it allows some room when the cups rise during the baking process and pop in the oven for 15 minutes. You can check around 10 minutes to see how they’re coming along by poking them with a toothpick or small kitchen blade to see if it comes away clean or not.
Once they’re done baking, set them aside to cool!
After they’ve cooled down, now comes the fun, but optional part, get your powdered sweetener for frosting and food coloring together and get to frosting and decorating!

A baking tray that’s oiled or buttered, and lined with parchment
Instructions
Get a microwave safe bowl and add your chocolate chips and condensed milk to warm up in the microwave for about a minute to a minute and a half. You can check to see if the chips are fully melted by one minute and take it out to stir, or keep it warm until all chips are melted!

Get your baking tray and pour out the mixture, you can even it out so that the mix is flush against the edges of the tray, but it’s not necessary, it just depends on you!
