Low-Carb, High Protein, High Fiber
Makes 8
Ingredients
1 Pound lean ground beef
1 package taco seasoning
8 Tumaro’s Carb-Wise Wraps (any flavour of choice)
1 Cup grated cheddar cheese, divided
1 Cup lightly crushed low-carb tortilla chips
8 Tablespoons sour cream
1 Large ripe tomato, diced
1 Heaping cup shredded romaine lettuce
Oil spray of choice
Hot sauce of choice
Directions
1. In a medium non-stick pan, brown the ground beef, breaking it up into small crumbles. Once cooked, drain any excess fat. Add the taco seasoning and ⅓ cup water, and simmer until thickened -- about 5 minutes. Transfer the beef to a bowl and set aside. Wipe the pan clean and set back on the stove. It will be used to toast the wraps.
2. Place a Low-Carb Tumaro’s Wrap onto a cutting board or flat surface, and place about 2 tablespoons of the taco seasoned ground beef in the centre. Spread it out slightly, then sprinkle with a little shredded cheddar cheese. If you prefer, add hot queso in place of the shredded cheddar cheese.
3. Place a small amount of low-carb tortilla chips on top for crunch. Next, layer with a dollop of sour cream, diced tomato, lettuce, and a drizzle of hot sauce. Sprinkle with more cheddar cheese.
4. Tightly fold the edges up over the centre, being careful not to tear the wrap. Continue these steps for the remaining 7 wraps.
5. Coat the non-stick pan in avocado or olive oil spray and heat over medium-high heat. Place the wrap seam-side down in the pan and toast until golden brown -- about 2 minutes. Flip, and toast for an additional 2 minutes, or until brown. Continue until all wraps are toasted, and serve immediately.
