
High-Protein Apple Baked Oatmeal
Warm, comforting, and packed with apple-cinnamon flavour, this baked oatmeal is an easy high-fiber, high-protein breakfast you can make ahead for busy mornings.

Ingredients
2 cups rolled oats
1 tbsp hemp hearts
1 tsp cinnamon
2 tbsp protein powder
1 tsp vanilla extract
1/4 cup applesauce
2 flax eggs (2 tbsp ground flaxseed + 6 tbsp warm water)
1/2 cup One Trick Pony Silky Smooth Peanut Butter
1 tsp baking powder
1 1/2 cups plant-based milk
1 apple, peeled and diced
8 apple slices, to top before baking
Directions:
1. To a small bowl, create your flax egg by combining ground flaxseed with warm water. Let it sit for 5 minutes.
2. In a large bowl, combine all your ingredients together except the apples. Whisk until well combined.
3. Fold in the diced apples with a spatula until evenly incorporated.
4. Grease a rectangular baking dish, then pour in the oatmeal mixture. Top with 8 thin apple slices (every apple slice will be in the center of each piece of baked oatmeal).
5. Bake the oatmeal for 55 minutes at 350°F or until the center is fully cooked.
6. Let cool completely before cutting into 8 pieces.
7. Top with yogurt, more apple slices, maple syrup, etc.
