Jazz up a cheesy childhood favourite into a delicious adult worthy meal! This Nature's Earthly Choice Cauliflower Rice creation is packed with protein, it’s gluten-free, and comes together in no time! That’s my kind of weeknight meal.

Ingredients
2 slices Thick-cut bacon
1 small Broccoli crown, broken up into small florets
1 box Nature's Earthly Choice Cauliflower rice
2 tablespoons Milk of choice
2 tablespoons Unsalted butter
2 tablespoons of Bob's Red Mill Nutritional Yeast
⅓ cup grated Sharp cheddar cheese (optional)
Instructions
1. Preheat the oven to 400℉ and line a small baking tray with parchment paper. Place the bacon slices on the tray, and bake for 15-20 minutes, or until crispy to your liking.
2. While the bacon is cooking, in a large pot, bring 6 cups of salted water to a boil. Add the rice, and cook for 10-12 minutes, stirring frequently. When the desired doneness is reached, strain and rinse with warm water. Set aside.
3. Remove the bacon from the tray, and set it aside on a paper towel-lined plate to soak up excess fat. When cool enough to handle, chop into small pieces.
4. Add the broccoli florets to the pan with the leftover bacon fat (if there is excess, carefully drain it off beforehand, you only need 1-2 teaspoons). Toss well, and add a pinch of salt and pepper. Transfer the tray back to the oven, and roast for 10 minutes, until broccoli is slightly tender and crisp on the edges. Remove from the oven and set aside.
5. In the same pot used to cook the rice, add the milk, nutritional yeast and butter. Stir over medium heat, until butter is melted, and the mixture starts to bubble. Add extra cheddar cheese if desired. Stir, until gooey and smooth.
6. Add the rice back to the pot and stir together. Gently fold in the roasted broccoli and bacon. Scoop into bowls and serve.
