Easy Cowboy Caviar

Fresh, colourful, and loaded with plant-based protein, this Cowboy Caviar comes together in minutes and is perfect for parties, meal prep, or snacking.

Servings: 8 people 

Ingredients:
For the Cowboy Caviar:
1 can black-eyed peas (540 ml) rinsed and drained 
1 can black beans (540 ml) rinsed and drained
1 can sweet kernel corn (341 ml) rinsed and drained
1 jalapeno, sliced (optional)
1 medium red onion, diced
1 yellow pepper, diced
2 green onions, diced
2 Roma tomatoes, diced
1 whole avocado, diced
Chopped fresh parsley (or cilantro)
Tortilla chips, for serving
For the dressing:
1/4 cup olive oil
1 lime, juiced
2 garlic cloves, minced
2 tbsp Yellow Bird Sriracha Hot Sauce
1 tbsp honey
Salt and pepper, to taste

Directions: 
1. In a large bowl, combine all the cowboy caviar ingredients together.

2. In a small bowl, make the sauce by adding olive oil, the juice from 1 lime, minced garlic, Yellow Bird Sriracha Hot Sauce, honey, salt and pepper and whisk well.

3. Pour the sauce over your bean mixture and toss until the dressing is evenly incorporated.

4. Serve with tortilla chips.
