High-Fibre Nut-Free Granola Bars

Ingredients:
For the granola bars:
8 dates, pitted
1 cup boiling water
1 tbsp warm water
1/2 cup maple syrup
1/2 cup +1 tbsp Oat Haus Granola Butter, cookie dough flavour
1 tsp vanilla extract
2 1/2 cups rolled oats
1/4 cup oat flour
2 tbsp chia seeds
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/3 cup vegan chocolate chips
For the chocolate drizzle:
¾ cup vegan chocolate chips
1 tsp coconut oil
Directions:
1. Line a 9x9 inch pan with parchment paper and set aside.
2. To a small bowl, add your pitted dates with boiling water, and let soften for about 5 minutes. Drain and set aside.
3. To a food processor, combine dates and warm water and pulse until blended into a paste.
4. Add maple syrup, Oat Haus Granola Butter, and vanilla extract and lightly pulse together until well combined.
5. Pour in rolled oats, oat flour, chia seeds, sunflower seeds, and pumpkin seeds and pulse about 10-15 times, just until all ingredients are well combined. You do not want to fully blend the oats and seeds.
6. Add in chocolate chips and pulse for 3-5 seconds, then fold in gently with a spatula.
7. Pour granola bar mixture into a lined square pan and place in the freezer for 1-2 hours.
8. Prepare chocolate drizzle by melting chocolate chips and coconut oil in the microwave in 25-30 second increments, stirring in between until fully melted.
