High-Protein Eggnog Pancakes

Servings: 16 pancakes

 

Ingredients: 
2 flax eggs (2 tbsp flax seeds + 6 tbsp warm water)
2 cups all-purpose flour, spoon-and-level method
1 scoop Good Protein EggNog All-in-One Shake
2 tbsp granulated white sugar
4 tbsp applesauce 
2 cups oat milk, (or milk of choice)
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon 

 

Directions:
1. To a small bowl, create your flax egg by mixing together ground flaxseeds and warm water. Let it set for 5 minutes.
2. To a larger bowl, combine flax eggs, applesauce, oat milk, and sugar and whisk until combined.
3. Add all-purpose flour, Good Protein EggNog All in One Shake, baking powder, baking soda and cinnamon and whisk until just combined. The batter should be slightly clumpy.
4. Heat up a pan on low-medium heat and cook your pancakes, about 1-2 minutes on each side or until the edges are golden brown.
5. Top with powdered sugar, whipped cream, or any other toppings of your choice.
