This beef stew recipe is perfect for when you just want something warm and comforting. Tender beef is simmered in collagen-rich beef broth until it's melt-in-your-mouth tender. It’s comfort food heaven that feels like a big warm hug in every bite!Â
Kettle & Fire Spicy Chipotle Beef Stew - perfect for warming you up on a cold rainy day! To make this recipe Whole30 Compliant, make sure to swap out the corn for chopped green beans!
Gluten-Free, Whole30 (if modified)
Serves 4
Ingredients:
1 tablespoon avocado oil
1 pound stewing beef, cut into cubes
1 yellow onion, diced
4 cloves garlic, minced
2 teaspoons ground cumin
1 can of diced tomatoes
½ - 186ml can chipotle peppers in adobo sauce, roughly chopped
1-479g box Kettle & Fire Chipotle Beef Broth
2 white potatoes, peeled and diced
1 cup frozen corn (See Note)
Chopped green onion, for serving
Directions:
Preheat the oven to 350F.
Add the oil to a large pot over medium heat. Season the beef with salt and pepper, and sear for 2-3 minutes per side until browned.
Add the onion to the pot, and saute stirring often, until translucent. Add the garlic and ground cumin. Cook for 30 seconds just until fragrant. Add the tomatoes, chipotle peppers, broth, and potatoes. Bring to a simmer, cover, and transfer to the oven. Cook for 1½ hours, or until the beef is very tender.
Add the corn during the last 30 minutes of cooking time. Season with salt and pepper to taste, and garnish with green onion.
Note: Omit corn for Whole30, and replace with chopped green beans
