Easy Protein Mediterranean Hummus Bowl

This vegetarian Mediterranean hummus bowl is super simple to make—and you probably have most of the ingredients in your pantry right now! Serve it as a quick lunch, or pack it up for a portable on-the-go meal that's high in protein and fibre.

  1. Begin by making the couscous. To do this, pour the water over the couscous and cover the bowl with a plate and set aside for 5 mins.
  2. In the meantime, sauté the mushrooms for 5-10 minutes in olive oil and season with salt, pepper and Harrisa.
  3. Next drain and rinse a can of chickpeas and kidney beans and again saute on a pan and season with salt, pepper and Harrisa.
  4. Remove the cover from the couscous and season with salt.
  5. Dice a tomato and set aside. You’re now ready to assemble the bowl.
  6. Begin by plating the couscous followed by the kidney beans and chickpeas, then the mushrooms, tomatoes and finally a generous serving of hummus. All that's left is to enjoy!
