Easy Protein Mediterranean Hummus Bowl
This vegetarian Mediterranean hummus bowl is super simple to makeāand you probably have most of the ingredients in your pantry right now! Serve it as a quick lunch, or pack it up for a portable on-the-go meal that's high in protein and fibre.

Ingredients
- 50 g Couscous
- 75 ml Boiling water
- 1 tbsp Hummus
- 1/2 Tomato
- 150 g Fresh/frozen Mushrooms
- 50 g Kidney beans
- 50 g Chickpeas
- 1 1/2 tsp Olive oil
- 1 tsp Salt
- 1 tsp Black pepper
- 1/2 tsp Harissa powder
Instructions
- Begin by making the couscous. To do this, pour the water over the couscous and cover the bowl with a plate and set aside for 5 mins.
- In the meantime, sautƩ the mushrooms for 5-10 minutes in olive oil and season with salt, pepper and Harrisa.
- Next drain and rinse a can of chickpeas and kidney beans and again saute on a pan and season with salt, pepper and Harrisa.
- Remove the cover from the couscous and season with salt.
- Dice a tomato and set aside. Youāre now ready to assemble the bowl.
- Begin by plating the couscous followed by the kidney beans and chickpeas, then the mushrooms, tomatoes and finally a generous serving of hummus. All that's left is to enjoy!
