High-Protein Cookie Dough Bars

Ingredients:
For the Cookie Dough Layer
1 ¼ cups superfine almond flour
1 scoop Good Protein Vanilla Milkshake protein powder
¼ cup maple syrup
1/3 cup coconut oil, melted
1/2 cup peanut butter
1/2 cup vegan chocolate chips
For the Chocolate Layer
3/4 cup vegan chocolate chips
1 tsp coconut oil
Directions:
- Line a rectangular pan with parchment paper and set aside.
- To a bowl, combine almond flour, protein powder, maple syrup, melted coconut oil, and peanut butter and mix until well combined. Fold in chocolate chips.
- Add cookie dough layer to the lined pan and place in the freezer to set.
- To a small bowl, make the chocolate layer by melting the chocolate chips and coconut oil in the microwave in 25-30 second increments, stirring in between until fully melted.
- Remove cookie dough from the freezer, then pour over melted chocolate. Place back in the freezer to set for about 20-30 minutes.
- Cut into squares and enjoy.
