High-Protein Cookie Dough Bars

Ingredients: 

For the Cookie Dough Layer

1 ¼ cups superfine almond flour

1 scoop Good Protein Vanilla Milkshake protein powder

¼ cup maple syrup

1/3 cup coconut oil, melted

1/2 cup peanut butter

1/2 cup vegan chocolate chips

For the Chocolate Layer

3/4 cup vegan chocolate chips

1 tsp coconut oil

 

Directions: 

  1. Line a rectangular pan with parchment paper and set aside. 
  2. To a bowl, combine almond flour, protein powder, maple syrup, melted coconut oil, and peanut butter and mix until well combined. Fold in chocolate chips. 
  3. Add cookie dough layer to the lined pan and place in the freezer to set. 
  4. To a small bowl, make the chocolate layer by melting the chocolate chips and coconut oil in the microwave in 25-30 second increments, stirring in between until fully melted. 
  5. Remove cookie dough from the freezer, then pour over melted chocolate. Place back in the freezer to set for about 20-30 minutes.
  6. Cut into squares and enjoy.
