High-Protein Red Pesto Pasta

Ingredients:
2 tbsp butter, salted
3 tbsp sun-dried tomato oil (oil from the jar, or use neutral oil)
1/2 cup sun-dried tomatoes (chopped)
1/3 cup SOLENZI Vegan & Nut-Free Sun-Dried Tomato Pesto, 180g
2 tbsp pasta water
1/2 cup oat milk (or your choice of milk)
Salt and pepper, to taste
1 pinch basil salt (optional)
1 box SOLENZI Gluten Free Artisan Pasta Red Lentil Fusilli, 227g

Directions:Â
- Heat a medium-sized pan over medium heat with butter and sun dried tomato oil.
- Add in the red pesto to your pan and mix until well incorporated.
- Bring a medium-sized pot of water to a boil and add salt. Once water boils, begin to cook your SOLENZI protein pasta for 7-9 minutes. Reserve some pasta water while it cooks.Â
- Add in your oat milk into the pan and mix together. Let cook down for another 5 minutes until the sauce becomes somewhat thick.
- Drain your pasta and add it into the pan.Â
- Season with the basil salt, regular salt and ground pepper.Â
- Add in your pasta water along with your sun dried tomato chunks
- Top with a bit more sun-dried tomato oil, salt and pepper before enjoying.Â
