High-Protein Red Pesto Pasta

This high-protein pasta is creamy, flavourful, and ready in just 20 minutes. Ingredients:

2 tbsp butter, salted

3 tbsp sun-dried tomato oil (oil from the jar, or use neutral oil)

1/2 cup sun-dried tomatoes (chopped)

1/3 cup SOLENZI Vegan & Nut-Free Sun-Dried Tomato Pesto, 180g

2 tbsp pasta water

1/2 cup oat milk (or your choice of milk)

Salt and pepper, to taste

1 pinch basil salt (optional)

1 box SOLENZI Gluten Free Artisan Pasta Red Lentil Fusilli, 227g

 

Directions: 

  1. Heat a medium-sized pan over medium heat with butter and sun dried tomato oil.
  2. Add in the red pesto to your pan and mix until well incorporated.
  3. Bring a medium-sized pot of water to a boil and add salt. Once water boils, begin to cook your SOLENZI protein pasta for 7-9 minutes. Reserve some pasta water while it cooks. 
  4. Add in your oat milk into the pan and mix together. Let cook down for another 5 minutes until the sauce becomes somewhat thick.
  5. Drain your pasta  and add it into the pan. 
  6. Season with the basil salt, regular salt and ground pepper. 
  7. Add in your pasta water along with your sun dried tomato chunks
  8. Top with a bit more sun-dried tomato oil, salt and pepper before enjoying.
