Vegan, High-Fibre, Low-Carb
Ingredients:
1 package Itz Not Noodles Low Calorie Udon
2 small cloves garlic, minced
½ tsp fresh grated ginger or ground
1 tbsp olive oil
1/3 cup creamy peanut butter low/no salt
2 tbsp low sodium tamari or soy sauce
1/2 cup hot water
1 tbsp rice vinegar
½ tbsp toasted sesame oil
1 tbsp sriracha
½ tbsp maple syrup
½ teaspoon red pepper flakes (can omit for less spice)
Directions:
1. Heat olive oil over medium heat, add minced garlic and sauté until golden. Add in the ginger and saute for 1 more minute.
2. Remove from heat and add in all remaining sauce ingredients (start with 1/4 cup of water) and place back over heat. Continue to stir until sauce is smooth, adding more water as needed to reach your desired consistency.
3. Taste and add more soy sauce, sriracha, or any other seasonings as desired.
4. Once sauce has started to thicken, add in the package of Udon noodles. Cook on medium heat for 2 minutes, or until cooked.
5. Serve and top with sesame seeds, green onion, cilantro and crushed peanuts if desired. Enjoy!
