
Vegan Spider Cookies
These spooky Spider Cookies are the ultimate Halloween treat! Soft, chewy vegan cookies topped with Unreal Dark Chocolate Peanut Butter Cups and chocolate “legs” for a creepy-cute twist. They’re the perfect mix of fun and delicious for parties, movie nights, or trick-or-treat surprises.

Servings: 12 cookies
Ingredients:
½ cup + 2 tbsp vegan butter, melted
1/2 cup brown sugar, packed
4 tbsp granulated white sugar
2 flax eggs (2 tbsp ground flax + 6 tbsp warm water)
1 tsp vanilla extract
1/4 tsp salt
2 cups + 2 tbsp all-purpose flour (spoon and level method)
1 tsp baking powder
1/2 tsp baking soda
12 whole Unreal Dark Chocolate Peanut Butter Cups
½ cup chocolate chips
1 tsp coconut oil
24 googly eyes
Directions:
1. Preheat oven to 350℉.
2. Line a baking tray with parchment paper and set aside.
3. In a small bowl, prepare your flax egg by combining ground flaxseeds with warm water. Set aside for 5 minutes.
4. To a medium-sized bowl, cream together softened vegan butter, brown sugar and white sugar with a hand mixer until smooth and creamy.
5. Add in your prepared flax eggs, vanilla extract, salt, baking powder, baking soda, and flour and mix with a hand mixer until well combined. Refrigerate for 1 hour.
6. Once the dough has chilled, scoop with a cookie scooper (45 ml size, equal to 3 tbsp) and roll into a ball with your hands.
7. Place cookies about 2.5 inches apart and bake for 14 minutes, or until cookies have flattened slightly but are still fluffy.
8. While cookies are baking, melt chocolate chips with coconut oil in the microwave in 25-30 second increments, stirring in between until fully melted. Place melted chocolate in a piping bag with a very thin tip and set aside.
9. Let cookies cool for about 10-15 minutes, then place one Unreal Dark Chocolate Peanut Butter Cup upside down in the centre of each cookie.
10. Pipe four chocolate spider legs around each peanut butter cup.
11. Pipe some chocolate behind each googly eye and place two around the edge of the peanut butter cup.
