Vegan Pumpkin S’mores Bars

These Pumpkin S’mores Bars are gooey, chocolatey, and perfectly spiced for fall. Made with vegan marshmallows and dairy-free butter, they’re soft, chewy, and filled with all the cozy flavours of the season. Perfect for sharing, these bars are easy to bake and guaranteed to satisfy every sweet craving.

Vegan, Dairy-Free

Cook Time: 35 minutes
Servings: 9 squares

Ingredients: 
3/4 cup dairy-free butter, melted
2/3 cup brown sugar, packed
1/3 cup granulated white sugar
2 flax eggs (2 tbsp flax seeds and 6 tbsp warm water)
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1 3/4 cups all-purpose flour, spoon and level method
1/2 cup dairy-free chocolate chips
1 cup crushed graham crackers
1 cup Dandies Vegan Marshmallows Pumpkin Flavoured, and extra to top before baking

Directions: 
1. Preheat the oven to 350ºF.
2. Line a 9×9-inch square pan with parchment paper and set aside.
3. In a small bowl, prepare your flax egg by combining 2 tablespoons of flax seeds and 6 tablespoons of water. Set aside for 5 minutes.
4. To a large bowl, whisk together melted butter, brown sugar, and white sugar.
5. Add in flax eggs, vanilla, baking powder, baking soda, and all-purpose flour. Whisk until well combined.
6. Fold in chocolate chips and crushed graham crackers.
7. To your lined baking dish, add half the dough and spread out evenly with a spatula. Top with Dandies Vegan Marshmallows and press them into the dough. Top with 7. remaining dough, then sprinkle extra marshmallows on top before baking. Bake at 350°F for about 35-40 minutes, or until the top begins to brown and a toothpick comes out somewhat clean. (The middle should still be slightly soft).
8. Remove from the oven, let cool for 5-10 minutes and cut into bars. Sprinkle with some flaky salt if desired.
