Vanilla Cardamom Coconut Milk Pana Cotta Dessert Cups

Simple yet elegant, panna cotta makes for a wonderful after-dinner treat. Made with No Sugar Added Panna Cotta Mix, not only is this Vanilla Panna Cotta delicious - it only takes minutes to prepare ahead of time!

 

 

Gluten-Free, Vegan, Plant-Based
Serves: 6

Ingredients:

3 cups full-fat coconut milk

½ teaspoon ground cardamom

¼ teaspoon ground cinnamon

½  teaspoon vanilla extract

1 package No Sugar Added Panna Cotta Mix

4 fresh or canned apricots, diced, plus more for topping 

¼ cup raw pistachios, roughly chopped

Crushed vegan, gluten-free vanilla cookies of choice (optional)

Fresh Mint, for serving

 

Directions:

In a pot over medium heat, add the coconut milk and bring to a simmer. Add the cardamom, cinnamon, and vanilla extract and whisk to combine. 

Remove the pot from the heat, and add the No Sugar Added Panna Cotta Mix and diced apricots. Whisk well, making sure there are no dry clumps. 

Spoon the mixture into 6 dessert cups and set in the fridge for at least 3 hours or overnight for best results. To serve, top with more apricots, chopped pistachios, and crumbled vanilla cookies. Garnish with fresh mint and enjoy.
