Gluten-Free Peppermint Brownies
Your favourite holiday treat just got a major upgrade. Fudgy brownies covered in a layer of rich chocolate ganache and topped with chocolate chips make for an unforgettable chocolate fix. These peppermint brownies are so good, you won't even notice that they're also gluten-free and vegan!

Ingredients
- 90 g Gluten-free flour
- 50 g Cocoa powder
- 170 g Sugar
- 2 tbsp Flax seed
- 4 tbsp Water
- 50 ml Plant-based milk
- 110 g Vegan butter (melted)
- 50 g Lily's No Sugar Added Chocolate Chips
Peppermint Buttercream
- 100 g Icing Sugar
- 40 g Vegan butter
- 1/4 tsp Peppermint extract
Ganache Top
- 100 g Vegan chocolate
- 120 g Plant-based milk
- 80 g Lily's No Sugar Added Chocolate Chips
Instructions
- Begin by mixing the flaxseed and water together and set aside for a minute.
- In the meantime mix together the flour, cocoa and sugar.
- Then add the milk, melted vegan butter and flax egg. Mix until incorporated.
- Finally, mix in the chocolate chips and transfer to a prepared 8x8 inch cake tin lined with greaseproof paper and bake for 15 minutes at 180°c/356°F
- As the brownies cool, make the peppermint buttercream by creaming together the vegan butter and icing sugar for 5 mins. Once pale and fluffy add the peppermint extract and spread it on the cooled brownie.
- Finally, top the brownie with ganache. You can make this by heating together the chocolate and milk for 30-sec intervals until smooth.
- Pour and spread the ganache over the buttercream layer and decorate with peppermint chocolate chips. Finally, slice and enjoy!
