Serves 4 People
1 pint cherry tomatoes
1 pint marinated mozzarella balls
2 Tbsp. Balsamic vinegar
¼ cup fresh basil
1 package Parmesan flavored Cello Whisps
In a medium sized serving bowl combine the tomatoes, mozzarella with the marinade and the
balsamic vinegar. Stir to combine. Scatter the basil on top and garnish with Parmesan Cello Whisps.
Cheesy Baked Eggs with Spinach
1 tablespoon olive oil
One 5oz package baby spinach
¼ cup heavy cream
¼ cup grated Parmesan cheese
2 tablespoons butter, divided
½ teaspoon fine sea salt
¼ teaspoon black pepper
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh basil
1 cup Parmesan WhispsⓇ, crumbled
Preheat oven to 375℉.
Heat oil in a large skillet over medium-high heat. Add spinach and saute until wilted, about 2 minutes. Add cream, Parmesan, and salt and pepper to taste.
Grease 4 ramekins with 1 tablespoon butter. Divide spinach among ramekins.
Crack 1 egg in each ramekin with spinach. Sprinkle with salt and pepper.
Place ramekins on a baking sheet and bake 15-20 minutes or until egg white is set.
In a small bowl, combine remaining 1 tablespoon butter, dill, basil, and Parmesan WhispsⓇ.
Set oven to broil. Sprinkle WhispⓇ mixture over eggs and broil 1-2 minutes or until browned.
Barbecue Chicken Lettuce Cups
Makes 4 servings
2 packed cups finely shredded green cabbage
1 large carrot, peeled and shredded
½ medium cucumber, peeled, seeded, and diced
4 green onions, thinly sliced
¼ cup mayonnaise
2 tablespoons cider vinegar
1½ teaspoons fine sea salt, divided
1¼ teaspoons black pepper, divided
1 teaspoon sugar
4 boneless skinless chicken thighs
1 tablespoon preferred vegetable oil
½ cup preferred barbecue sauce, plus more for serving
8 large butter or romaine lettuce leaves
1 cup BBQ Bacon Cheddar WhispsⓇ, roughly crushed
In a large bowl mix together cabbage, carrot, cucumber, green onion, mayonnaise, vinegar, ½ teaspoon salt, ¼ teaspoon pepper, and sugar. Set aside.
Brush chicken with oil and sprinkle with remaining 1 teaspoon salt and 1 teaspoon pepper.
Prepare a hot grill fire or preheat grill to medium-high. Place chicken on grill and cook, turning once, until well-browned and internal temperature reaches 160℉, about 10 minutes. Brush chicken liberally with barbecue sauce on both sides and cook until internal temperature reaches 175℉.
Transfer to a cutting board and let sit 5 minutes. Thinly slice chicken.
Divide slaw between lettuce leaves, top with chicken, and sprinkle with WhispsⓇ. Serve with more barbecue sauce.
